Chorizo-Stuffed Meatloaf with Smoked Paprika Cream

Ingredients :

  • 1 lb ground beef
  • 1/2 lb chorizo (casing removed)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 onion (diced)
  • 2 tbsp smoked paprika
  • 1/2 cup sour cream
  • 1 tsp garlic powder

Instructions :

  1. Prep : Mix beef, breadcrumbs, milk, egg, onion, paprika, and garlic powder. Form into a loaf.
  2. Stuff : Press chorizo into the center, enclose with beef mixture.
  3. Bake : 375°F (190°C) for 45–50 minutes.
  4. Sauce : Mix sour cream with 1 tsp paprika; drizzle over sliced meatloaf.

Chef’s Tip : Add diced jalapeños to the chorizo for extra heat.
