Chorizo-Stuffed Meatloaf with Smoked Paprika Cream

Ingredients :

- 1 lb ground beef
- 1/2 lb chorizo (casing removed)
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1 onion (diced)
- 2 tbsp smoked paprika
- 1/2 cup sour cream
- 1 tsp garlic powder

Instructions :
- Prep : Mix beef, breadcrumbs, milk, egg, onion, paprika, and garlic powder. Form into a loaf.
- Stuff : Press chorizo into the center, enclose with beef mixture.
- Bake : 375°F (190°C) for 45–50 minutes.
- Sauce : Mix sour cream with 1 tsp paprika; drizzle over sliced meatloaf.
Chef’s Tip : Add diced jalapeños to the chorizo for extra heat.
